Delicious vegetable food for children (Part 1)

The trend of small families with spouses and children being vegetarian is on the rise. However, in fact, many parents are confused when cooking for their children. It's easy for adults to eat whatever they want, but young children need a lot of nutrients and constantly change dishes to reduce boredom. We again received "requests for help" thanks to Tram Tue's advice. Tram Tue would like to share some attractive, nutritious and easy-to-make vegetarian dishes for you to show off your cooking skills!
1. Purple sweet potato filter cake
Material:
200g tapioca flour
500g purple sweet potato
150g hot water (~90-100 degrees)
20g sugar or honey
Banana leaves (or dong leaves, stencils...)
Making:
Purple sweet potato, peeled, washed, sliced thinly and steamed
Place the potatoes in the mashed bowl while still hot. Add sugar or honey to the mix (more or less sugar depends on each person's preference)
If the mashed potatoes are too dry, you can add a little more milk. After mashing, put the potatoes to the side and wait
Next, put the tapioca flour in the bowl & pour in the hot water slowly. Use chopsticks to mix the dough
Use your hands to knead the dough into a smooth ball, then cover with cling film and let rest for about 20 minutes. Put the dough on a cutting board sprinkled with a little dry flour to prevent sticking
Roll the dough into a thin rectangular sheet. Spread the mashed sweet potato evenly over the dough. Then curl it up into a long cylinder. Cut the dough stick into pieces about 4-5cm dày thick
Place the cake in a steamer lined with banana leaves, remember to space it out to avoid sticking together. Cover the pot, bring to a boil over high heat. When the water boils, lower the heat, steam the cake for ~10-15 minutes, then the cake is cooked. Turn off the stove, let it rest for 5 minutes, then take out the dumpling on a plate
Filter cake is a snack that many people love. But this dish often takes a lot of work when making, especially when kneading the dough and shaping each cake. So, to save time, try the simple cake recipe above, make sure it's quick and delicious. You can make many cakes at once, then put them in an airtight container and store them in the freezer. When you want to eat, just defrost in the refrigerator and steam it.

2. Purple sweet potato banana cake
Material:
1 purple sweet potato
2 ripe bananas
2 slices of bread
Making:
Sweet potato peeled, steamed and mashed
Bread cut 4 edges, eat the edge first. Then use a rolling pin or use a washed water bottle to roll the bread
Spread the potato evenly on the bread, place the peeled ripe banana at the top and roll it up
Next, cover with cling film for about 5 minutes to fix, then cut banana bread into bite-sized slices. If you like to eat cold, you can put it in the fridge for a while
You can change the taste of purple sweet potato to yellow sweet potato or butter, it's also very delicious

3. Bread stuffed with deep-fried beans and mushrooms
Material:
1 loaf (or 2-3 loaves of bread). Should choose small, dense cakes
3 small pieces of beans (200g)
5 fresh shiitake mushrooms (or soft soaked dried shiitake)
Pepper
Vegetarian seasoning
Making:
Crushed tofu. Mushrooms are washed and cut into small pieces
Mix the ingredients: beans, mushrooms with seasoning, pepper and then knead well
Cut the bread into slices about 3-4 cm thick. Gently press the center of the slice of bread with your hand. Stuff the beans into each slice of cake, pressing firmly to adhere to the bread.
Fry bread until golden brown on both sides. First fry the bean side first, then flip over and fry the back side quickly with high heat, the cake will not be soaked in much oil. When eaten with chili sauce
Note: For good adhesion of beans, you should choose soft, delicious beans, put them in a cloth to squeeze out all the water or leave them in the refrigerator overnight before processing.
